eat me, i'm irish

Key Lime Cupcakes:

Cake:
1 box lemon cake mix
½ cup lime juice
¾ cup water
1/3 cup vegetable oil
3 eggs
4-5 drops green food coloring

Mix together and prepare according to package directions.

Tip: If using a dark-colored baking pan, set oven 25 degrees cooler than instructed. And always, always, always cook them for less time than the box says. Nobody likes dry cake, so don't overcook them.

Icing:

1 box cream cheese, softened
1 stick butter, softened
1 lb. powdered sugar
1/3 cup lime juice

Beat butter and cream cheese together with mixer. Add lime juice, beat until smooth. Add powdered sugar gradually until desired consistency.

You may never go back to chocolate again. (Okay, that's a stretch. But you get the drift).

Can't wait to try those! Guess I'll have to wait for St. Patty's day next year though :-) May try them w/o the food coloring before then if I can't wait.
