easy go-to dinner

Tomato-Basil Couscous Salad

2 cups whole wheat couscous
2 cups chicken broth
2 T. Butter
1 t. kosher salt
3 ripe tomatoes
1 cup loosely packed basil leaves, chopped
2 chicken breasts, cooked and cubed
½ white onion, thinly sliced
2 large cloves garlic, minced
4 T. extra virgin olive oil, divided
2 T. red wine vinegar
Salt and freshly ground black pepper, to taste

  1. Sauté onion and garlic in 2 T. olive oil until tender.
  2. Place dry couscous, chicken broth, salt, and butter in microwave safe bowl. Microwave on high about 3 ½ minutes. (Can also be done on the stove top - follow package directions). Fluff with a fork.
  3. Mix all ingredients into couscous.
  4. Optional: Serve over salad greens with red wine vinaigrette.
