With the onslaught of my new crazy schedule, I have lost the time, energy, and interest that goes into preparing meals for myself. I have downgraded from home-cooked meals to PB&J and cereal. This means that I will likely enter culinary school having not cooked in months. This is a very sad and potentially dangerous thing. But whatever.
I have never been a fan of frozen meals. They are typically full of stuff that people shouldn't eat, but I've discovered that my dear friends at Kashi do it up right. My current favorite and epicurean staple is Chicken Florentine. Typically, I've steered clear of frozen meals with meat or poultry, because it is usually mushy and disgusting (and potentially fake). But this chicken is the real deal - Grilled chicken with spinach, sweet red peppers, and baby Portobello mushrooms served over Kashi Seven Whole Grains and Sesame with Orzo Pilaf, and topped with a garlic white wine sauce and shredded parmesan cheese. If it weren't for the little plastic containter, I wouldn't guess that it came from the grocer's freezer. Yum.
