cheater pizza

This is one of my new favorite things to “cook.” It fits into my hectic schedule rather nicely, though it doesn’t help with my effort to eat less bread (which really isn’t much of an effort).

I had this at Crestline Bagel last week, and decided to make it for less at home.

Chicken Pesto Bagel Pizza
(one serving)

½ of a whole wheat bagel
2 teaspoons basil pesto (prepared or homemade)
1 jarred roasted red bell pepper, diced
1 tablespoon crumbled goat cheese
Cooked chicken (however much you like)

Pile it all up on the bagel and toast in the toaster oven (or broil in the real oven). It is SO good. And way easy.

Prepared pesto can be found on the pasta sauce aisle. I bought Classico - it is good but beware of the intensity of the garlic. It lingers even after two tooth-brushings. Also, Publix has little tubs of crumbled goat cheese where you'd find the processed cheese products. It's even Publix brand so it's not insanely expensive. If you're not a fan of the pungency, try provolone or mozzarella. Roasted red bell peppers can be found near the olives.

It is a sad, bachelor food life that I lead.

I LOVE this at Crestline Bagel. I make it on a Tortilla and/or pita as well.

mmm...yes. friday night is pizza night usually here, and my favorite is basil with tomato. i will have to try this for lunch sometime.

not that i'm against bread either....but i have found that doing the same thing on a tortilla and putting it in the oven for about 5 min at 400 makes a super crispy tortilla, that doesn't taste like tortilla. more like a crispy pizza crust.

my experience has been that goat cheese tastes as goats tend to smell (Laura's uncle raises goats). Hence, I'm no big fan of it.

Sounds tasty though.
